Stay back! I have powers!
So, the kölsh... After bottle conditioning and being chilled, it's quite lovely. The spiciness of the hops has mellowed quite a lot, and in its place there are hints of fruit, maple, and vanilla. I want to serve it with poached pears just to watch friends' eyes roll back in their heads.

In short, J-, I've brewed the kölsch I attempted to recommed to you.

I'm very pleased. The color is a bit darker than I'd like, but it's just so good that I can't get too worked up over it.

yay! Sounds tasty!
That's because it was a beer brewed in company and suffering (with the heat).

Call me superstitious, but...

I'm convinced that my best work comes out of the gathers. It's like the yeasties can sense the goodwill.

For you, I have the apple wit. It's lambic-like, but with a predominantly green apple tartness.

And lo, our hero finds purpose. Even if it only lasts for as long as it takes to drink the kölsch.

There's a maple-spruce beer fermenting in the closet.

It's remarkably rich for a pale(ish) beer. I'm guessing that it has a lot to do with the yeast, but there are chemical processes involved that I still don't fully understand.

Hooray for boobies esters!

Dude...you need to start a mail order service.

*drool* My eyes are rolling back in my head just imagining it...

I know that I can't ship from MA, but I'm looking into whether it's possible to do from New Hampshire. The USPS has gotten a little funny, and I've heard cases where the "Decorative Glass" ploy didn't work. I can keep you posted if you like...
