Oddly enough, the choice of ingredient for this battle proved a difficult one. I had wanted a winter vegetable, and was fully prepared to go forward with one until our last ingredient was pronounced difficult to work with because of its subtle flavors. Rather than swing to entirely the other extreme (because, let's face it, a little chipotle goes a long way...), I decided upon something I personally love working with. You have once again avoided The Great Pumpkin battle, and have instead moved into the world of aromatics.

The secret ingredient for this battle is:


Leeks.

So far as I know, these should be readily available to you. As I explained in the rules, I will be accepting proposals (via email) as soon as this is posted, and I will be limiting the number of dishes in each course. Plating begins at 2PM on Saturday afternoon, and competitors are encouraged to scale for tasting portions. A selection of beverages will be available should you choose to pair your dish. Suggestions on this front are appreciated.

SPECIAL RULE: No cilantro or corriander may be used in any of your dishes.

I believe that we have six competitors, and I am very much looking forward to seeing how each of you address this challenge. Luck and skill to you all.

Does that include ramps if I can find some?

Hopefully the stores will have a decent selection because I know it's not really a winter veggie.

Leeks yes. Ramps less so.

I'm just concerned that people will hit the chick at Whole Foods who exactly two days after I had bought leeks there looked at me with straight face and said, "We don't carry those here."

More spring, yes? I'd prefer that we stay with heavily domesticated leeks, but if you've a specific idea and absolutely must use them, drop me email and we can talk about it.

I have no ideas right now since all I've ever made with leeks is your standard potato leek soup but I'll think of something.

Although I do want to know if appetizer combo/trio things are frowned on because it would be considered more than one dish?

I seem to recall that they were okay. I thought the danger was filling up people with a mini-three course meal.

yay! I think the chefs should wear leek hats for this competition, because of that battle in Wales with the... or something. right?

Dammit. I remember making noise awhile back about wanting the tricky course, which in this case would have to be dessert. Do you want me to make a dessert with leeks?

My main concern is that we don't have six iterations of the same dish... say potato leek soup, for instance. You can attempt to go the dessert route (which will be great for originality points), but you don't have to.

Let me know if you have trouble finding them. Whole Foods has decided to go into an apparently unhelpful phase, but I know of at least one place they can be acquired.
