Question for you... do you cure and serve, or do you take the hyper-cautious route and freeze it for seven days after the cure?

Cure and serve baby. Cure and Serve. When My family makes gravlax its hard enough to wait through the curing process. We lurk in desperation for the tastiness. So the idea of freezing it for a few days just seems insane to some degree.

Given that even Ruhlman, normally a "ZOMG BOTULISM!" guy, says nothing about safety freezing, I'm going to chalk it up to paranoia. We bought a beautiful fillet, and I've exercised my usual animal protein precautions, so I'm going to trust all will be well.

Tonight or tomorrow we crack it.

The thing that's really mind blowing is that this is all fairly simple work. Salt, sugar and spices coupled with a little bit of time will do wonders for just about anything.
