I seem to have fallen into a little bit of a rut of late where I am either over- or under-seasoning my foods. This is problematic because I'm starting to second-guess pretty much everything I'm working on, and this only serves to exacerbate the problem. Starting with the assumption that I have no idea what I'm doing is a little crazy making. It certainly doesn't lend itself well to experimentation.

...and over-heated another, and otherwise tend err on the overcautious side.

There's also the slightly underdone quiche to consider.

I don't think the quiche was underdone. I think it's a bit more custard-like than I normally make which made it look underdone, but wasn't.

I'm attempting to expand my preferences. I thought the quiche was awesome. Kate came sniffing around my office at lunchtime. :)

There's also the fact that you're human and humans err to consider. It's not like you're a robot that blew a fuse and needs to go back to the plant for a new brain.

I've never mastered seasoning. Things taste different when they're hot or cold, when I eat a teensy taste or a whole mouthful, when... what's the worst that could happen if you mis-season? Most things are salvageable in some way.

In most cases, the worst is having to toss dinner, followed closely by V pushing her plate away and telling me she can't eat what I've made. We don't often hit that point, but I've had issues with a number of attempts of late.

It will pass. It's just something to poke at for the time being.
