In hard ciders, what type of apple is typically used? I think a golden delicious apple cider spiced like a pie might work...

Traditionally? Pretty much whatever you had on hand. And given the changes that occur during fermentation, I'm not even sure how much the character of different apples would come through. Sweetness just get sucked away utterly since it's a highly fermentable sugar.

Dunno. Must try stuff.
