My yogurt isn't firming up how I'd like.

ETA - It looks like some recipes call for unflavored gelatin to help the yogurt set. While novel, I'm not sure it's an option I want to pursue.

Could the heat have effected the yogurt cultures during the early stages?

This isn't the first time it's happened, and if anything, the heat is helping to maintain the temps within the vessel.

Dunno. Right now, I'm either blaming the milk or the fact that I'm looking in on it at the minimum time for the process to finish. Hopefully it will look better once I get home tonight, though I did disturb it and that could muck things up.

Most store-bought yogurts have gelatin in them, which is why I don't eat them.

I'm probably the wrong person to ask, since I hate vegetarians just as much as I hate all the other groups to which I happen to belong.

Besides, it's not the vegetarians you need to worry about: it's the Jews!
